OUR EXECUTIVE CHEF

New for 2026, we are proud to welcome our Executive Chef, Paul Gallagher. This marks an exciting new chapter for Lycian Events, as for the first time, everything you see and experience within Cafe Virage is created entirely in-house. This gives us complete control over our culinary output, allowing us to elevate our offering to new heights!

Starting his culinary journey at just 13 years old washing dishes at Rushden & Diamonds, his passion for food quickly evolved from flipping burgers to leading professional kitchens before his 18th birthday. By the time most chefs are finding their feet, he was already running the pass as a Restaurant Head Chef, devel- oping menus, leading teams, and building a reputation for drive and creativity.

After completing his NVQ in Catering & Hospitality with distinction-level commitment, he sharpened his craft across restaurants and Italian kitchens before stepping into high-volume excellence. As Executive Head Chef across MK Dons Stadium, Hilton Hotels & Resorts and Arena MK, he spent 13 years delivering elite hospitality at scale, orchestrating events exceeding 4,000 covers with precision, consistency, and flair.

Entrepreneurial instinct then took over. Over the past five years, he has successfully operated two pubs, an outside catering company, and multiple Masonic halls, while delivering high-profile events and collaborating with clubs including Peterborough United and Portsmouth Football Club. Along the way, he has built not only a thriving culinary career but a proud legacy, including a son now cooking at Claridge’s!

Now, he brings decades of leadership, high-volume mastery, and refined hospitality to one of motorsport’s most prestigious stages: the iconic 24 Hours of Le Mans. Known for matching intensity with excellence, he and his brigade are set to deliver bold, elevated dining worthy of the spectacle, where performance on the plate meets performance on the track.
